Autumn spiced granola
I don't often make granola because quite frankly, I can't be trusted not to eat it all in one go. However, the urge was strong today and with it being a tad miserable outside, I decided to indulge myself and make a batch for the week ahead.
The weather is beginning to turn colder and I feel myself immediately being drawn to all the warming spices, so into the mix they went. The result was a simple and tasty autumn spiced granola. So simple in fact, I thought I'd jump straight online and share it so you can make it too.
I personally found this sweet enough just with the bananas. However, if you feel you need a little more sweetness you could add 2-3 tablespoons of maple syrup or honey to the wet mix.
My favourite ways to enjoy granola are sprinkled on top of a smoothie bowl, straight out of the jar by the handful or alongside coconut yogurt and berries.
AUTUMN SPICED GRANOLA
Wet ingredients:
2 large very ripe bananas
3 tbsp coconut oil, melted
1 tsp vanilla extract
Dry ingredients:
1.5 cups jumbo rolled oats (gluten free if required)
1 cup almonds, roughly chopped
1/2 cup walnuts, roughly chopped
1/2 cup pumpkin seeds
1 cup coconut chips
2 tbsp carob or cacao powder (optional)
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp sea salt
Method:
Pre-heat oven to 200°C and line a baking tray with parchment.
Mix all dry ingredients together in a large bowl.
Blend wet ingredients together in a blender. If you don't own a blender, you could try mash the bananas and mix together by hand.
Add wet mixture to dry and stir well.
Spread mixture evenly on prepared tray and bake for around 20 minutes.
